Nine Elms Fennel Punch Mocktail

If you’re looking for a delicious mocktail with a unique flavour combination, then look no further. This semi-sweet punch pairs Nine Elms No. 18, a sophisticated and aromatic non-alcoholic berry drink, with a pink gin alternative, Noughty’s premium alcohol-free sparkling wine, and the distinctiveness of fennel syrup. Savoury and herbaceous qualities are complemented with aromas of berry fruits and hints of floral, juniper and citrus notes. The result is an invigorating flavour sensation. Serve over ice and garnish with a sprig and stick of fennel and a twist of lemon.

INGREDIENTS
25ml Nine Elms 18
20ml Fennel syrup (recipe below)
25ml Pearson’s Hibiscus & Rose
Approximately 70ml Noughty non-alc sparkling wine
Ice
Glass – large punch cup, julep glass or highball
Garnish – sprig and a stick of fennel and a large twist of lemon
METHOD
  1. Add Nine Elms and syrup to the ice filled glass.
  2. Stir to combine.
  3. Top with the sparkling wine.
  4. Garnish with sprig of fennel and a large lemon twist.
  5. To make the fennel syrup, steep 1 fennel tea bag (or 5 grams of fennel seeds) with 100ml hot water and 100g caster sugar in a saucepan over a low heat for 5 minutes, making sure sugar is completely dissolved. Allow to cool then discard the tea bag.
