Mocktail Recipes

Bottle of Lyre's American Malt next to a whiskey mocktail garnished with a ginger skewer

The Penicillin is a modern classic, created in the mid 2000’s at the famous Milk & Honey bar in New York City. This whiskey mocktail is warming, tart and spicy - it’s perfect for cold nights. Lyre’s American Malt, which captures the essence and flavours of a traditional bourbon, is mixed with honey and ginger syrup, lemon juice and smokey tea. The full-bodied flavours of the American Malt are complemented by the soothing honey and citrus flavours, enlivening ginger spice and smokiness of the tea. For the best experience, serve over ice in an old fashioned glass and garnish with some candied ginger.

INGREDIENTS

2 Parts (60mL/ 2 Fl Oz) Lyre's American Malt
½ Part (15mL/ ½ Fl Oz) honey and ginger syrup
½ Part (15mL/ ½ Fl Oz) lemon juice
1 Part (30mL/ 1 Fl Oz) strong smoky tea (Lapsang souchong or Russian Caravan tea)

METHOD
  1. Shake briefly with ice, strain over large ice cube in an "old fashioned" glass.
  2. Garnish with a ginger cube on skewer. To make Honey and Ginger Syrup, add boiling water (½ cup boiling water) to honey (¼ cup runny honey), stir to dissolve. Add ginger (1 tsp jarred ginger) and stir thoroughly, pour into bottle. Refrigerate.
