Mocktail Recipes

London Dry Collins Gin Mocktail next to a bottle of Lyre's Dry London Spirit Sans Drinks

Otherwise known as a John Collins (brother of the perhaps better known Tom Collins), this is a refreshing twist on an old favourite gin mocktail. The addition of lemon, sugar and soda to Lyre's London Dry Gin gives you a deliciously easy, refrshing mocktail perfect for summer drinking. Serve in a Collins glass if you have one, or a highball will also do, with a wedge of lemon.

INGREDIENTS
60 ml Lyre's Dry London Spirit
15 ml white sugar syrup (1:1)
30 ml lemon juice
60 ml Strangelove Soda Water
Wedge of lemon
METHOD
  1. Fill a Collins or Highball glass with ice
  2. Pour ingredients into the glass and stir
  3. Garnish with lemon wedge. *To make Sugar Syrup combine 50 grams of sugar with 50 ml of warm water in a jar and shake to dissolve.
NOTES

A slightly sweeter version of the classic Collins which dates back to 1933.
