Penicillin Mocktail with ginger and cinnamon on the bench

A modern classic, The Penicillin cocktail is a scotch-based drink from New York bartender Sam Ross. The modern-classic is the balanced mix of smoke, ginger, and lemon. Traditionally served on one single ice cube. To make, add Sans Bar Kings Of Tartan Non Alcoholic Whiskey, lemon Juice, Honey and Ginger.

INGREDIENTS
40ml Sans Bar Kings Of Tartan Non Alcoholic Whiskey
Fresh Lemon Juice
150ml Honey
1 thumb of Ginger
METHOD
  1. For honey ginger syrup, stir honey into 150ml hot water in a small saucepan over medium heat to dissolve. Add ginger, simmer gently to infuse (10 minutes), then strain and cool. Syrup can be sealed, and refrigerated, for up to 1 month.
  2. Add whisky alternative, lemon juice and 20ml of honey ginger syrup to a shaker half-filled with ice. Shake, strain into a cocktail glass and serve.
