This twist on the ever-popular Pina Colada is a refreshingly sweet summer mocktail that is sure to impress. The addition of passionfruit pulp and lime juice to the traditional pineapple, coconut and white rum flavours enhances the result, adding some extra zing. This version of the rum mocktail uses Lyre’s White Cane Spirit, a delicious alcohol-free alternative to white rum. Serve in a goblet, balloon or colada glass, add plenty of ice and garnish with mint and a passionfruit shell. Enjoy!
INGREDIENTS
2 Parts (60mL/ 2 Fl Oz) Lyre's White Cane Spirit
½ Part (15mL/ ½ Fl Oz) lime juice
3 Parts (90mL/ 3 Fl Oz) unsweetened pineapple juice
¼ Part (7.5mL/ ¼ Fl Oz) premium coconut syrup
½ fresh passionfruit pulp
METHOD
- Dry Shake, fill shaker with ice, shake hard, strain into a goblet, ballon or colada glass, fill with ice
- Garnish with mint sprig and passionfruit shell
