Espresso martini mocktail next to a bottle of Seadrift Coast

Made with a non-alcoholic distilled spirit from Sydney’s Northern Beaches, this has notes of coriander and lime. Coffee, sugar, lime, egg white, vanilla essence and native wattle seeds are added to the recipe in a startling combination. This mocktail recipe will utterly perplex and delight you in equal measure. Top with vanilla foam and native wattle seeds to serve. Are you game to try it?

INGREDIENTS
20ml Seadrift Coast
20ml demerara sugar syrup
1 shot espresso coffee
Native wattle seeds
3 egg whites
1/4 teaspoon vanilla essence
90ml sugar solution
30ml lemon juice

METHOD
  1. Pour 20ml Seadrift Coast, 20ml demerara sugar syrup, 1 shot espresso coffee into a martini glass, top with vanilla foam and native wattle seeds to serve.
  2. To make the vanilla foam, place 3 egg whites, 1/4 teaspoon vanilla essence, 90ml sugar solution and 30ml lemon juice in a cream foamer and double charge. Makes 500ml of Vanilla foam.
