Elderflower provides the light floral tones for this mocktail, while fennel balances it out with a touch of aniseed. The result is a light refreshing drink that makes a wonderful brunch cocktail or aperitif. Combine the ingredients over ice in a highball glass and finish with a piece of lemon peel.

50 ml Vera Ginø
20 ml elderflower & fennel seed cordial
Top with
StrangeLove soda water
METHOD
- Place ice in a highball glass. Pour in Gino, elderflower & fennel seed cordial, and slowly top with soda water.
- Garnish with a lemon peel.
NOTES
* Elderflower & fennel seed cordial Roughly grind some fennel seeds and combine them with 300 ml of high-quality elderflower syrup, which you can get at your supermarket. Let it sit for 24 hours in the fridge. Then just strain through coffee filter and store.
