Named Puerto Rico’s National Drink in 1978, the Pina Colada is a classic. This non-alcoholic version of the iconic drink combines Lyre’s White Cane Spirit, an alternative to white rum, with traditional flavours of tangy pineapple and creamy coconut to create the perfect summer mocktail. Blended to a delicious smooth consistency, the Virgin Pina Colada is a refreshing delight - you could easily imagine yourself, drink in hand, on a palm-fringed beach. Serve in a poco grande glass and garnish with a wedge of fresh pineapple.

INGREDIENTS
50 ml Lyre’s White Cane Spirit
50 ml fresh pineapple juice
1 tablespoon coconut cream
1 teaspoon caster sugar
5 chunks of fresh pineapple
Cubed ice
METHOD
  1. Place the pineapple chunks into a blender, add caster sugar, and coconut cream.
  2. Add 50 ml of Lyre’s White Cane Spirit and 50 ml of fresh pineapple juice.
  3. Add cubed ice and blend the ingredients until it has a smooth consistency.
  4. Pour into a glass and garnish with a pineapple chunk.
