The Zythologist
The Zythologist is a first-of-its-kind brewery that uses science and analytical testing to craft the best non-alcoholic beer possible. Based in Victoria, the founders of The Zythologist have PhDs in science and engineering and are affiliated with the Monash BrewLab, part of the Chemical Engineering department at Monash University. The Zythologist uses a modified brewing process that discourages yeast from converting sugar to alcohol to create Citronium, their first non-alcoholic beer.
