Sage gin mocktail Sans Drinks

For a refreshing alternative to a gin and tonic, try making your own sage cordial for a warm and slightly savoury twist. The sugar in the sage cordial keeps things on the sweet and light side. Simply build in a glass with ice and garnish with a sage leaf. 

INGREDIENTS
50 ml Vera Ginø⁠
30 ml Sage cordial⁠⁠
Top with tonic⁠⁠
METHOD
  1. Build over ice and serve with a sage leaf in a highball glass.⁠
NOTES
* To make sage cordial, combine 300g hot water with 200g caster sugar in a jar to make the simple syrup. Then tear the sage leaves and drop them in. Allow to infuse for at least 12 hours. Strain the liquid and add 4g of citric acid.⁠
